As we head into Thanksgiving, and our eyeballs are bombarded by turkeys and cranberries and debates about whether you say “stuffing” or “dressing,” I’d like to talk about something fun…
…and that is the food that happens outside the feast, e.g. the day after Thanksgiving, when you want to put your leftovers to optimal use, or that weekend when you are tired of beige, buttery food and crave entirely different flavors. (Joanna’s friend always plans on lasagna for this reason.)
Personally, I am a huge fan of the Leftover Sandwich (shown above: turkey, stuffing, mashed potatoes, and cranberry sauce piled high on good white bread, and drenched in gravy), but turkey pot pie is a close second. And I, too, am on Team Lasagna — I always have a stash of Italian prepared foods (lasagna, eggplant rollatini, chicken Parm, manicotti) waiting in the freezer, ready to be deployed for the weekend when cooking fatigue becomes very, very real.
