I felt each of those things so viscerally.
Good olive oil and vinegar are key to any salad, even an incomplete caprese. I swear by Frankie’s 457 extra virgin and try to find a balsamic with a thicker density for dressings. It’s a little sweeter.
Also re: kale. Lacinato only! Leave the curly stuff for kale chips. My go to salad is lacinato massaged and with said olive oil and salt. Add a squeeze of lemon, then shave some parmesan onto the salad. Toast some panko in butter, salt, and grated garlic and top with this mixture. My partner and I fight over it, so we don’t care if our son doesn’t eat it.

I think I chiffonaded some caterpillars that were hiding in the kale I picked from my garden this weekend.

My child is weirdly “discerning” about salad, but not at all picky about cucumber slices, carrot sticks, red pepper, etc. I’m just fine using crudité and a gateway drug.
Also, a well stocked selection of oils, vinegars and spices and a caprese is only one “chef-like twist” away from being saved! A mealy tomato, tho, that is tragic.
I still feel strongly that on the phone feed the entire comic should show without the need to click to see it. It’s so odd to cut the comic picture on the front page.

Anytime I buy a box of greens I feel challenged to eat the whole box before it goes bad.
Welp, “Chiffonade” was my vocab word for today! :)
massaged kale is the way: chiffonade sure but at least – cut into manageable pieces, then season with salt, then massage until soft. Toss with other seasoning or dressing and viola. Don’t forget to toss with avo cubes: chef’s kiss.
My kids declined the salads on their plates until I was back in the kitchen, putting away the leftovers. Then suddenly, they decided it was wildly fun to be fed using tongs. So I stood at the kitchen counter and dropped more than one serving of salad into their open beaks, I mean, mouths.
It’s that constant refrain of parenthood: whatever it takes.
